We are producers

We produce a top-quality extra virgin olive oil. Sound simple? Trust us, it isn’t! We personally handle the care of our olive groves, the harvesting of the fruit and the production of our olive oil.

The harvest lasts for approximately 2 months (usually November-December). It is a tiring and arduous process, but one that rewards us with many beautiful moments, in contact with nature and a vital sense of creativity.

The harvest is followed by a standardisation process. Our valuable product is bottled, ready to travel to your table!

At the same time, though, our trees need attention. Pruning, fertilization and nourishment, watering, fighting disease. Since we work according to the principles of regenerative farming and permaculture, these tasks require a lot of personal hard work.

Despite this, we set aside time every year, to organize oil-tasting sessions, seminars and events centred on olive oil, to ensure that you get to know us and we get to know you. This side of the business is of utmost importance to us, because we firmly believe that reconnecting consumers and producers, and the food production process, is the key to a sustainable future for us all.

As you can see, there is a lot to do, all of the time. Thankfully, we have a big family! Our father is always there, offering his personal labour or his valuable experience. Our two younger siblings are actively involved in the farming, while our mother makes sure that we always have the most important fuel: freshly-cooked, home-made food!

What would we like you to take away from all of this? The fact that we are producers and not traders. Every year, we produce between 2,000 and 4,000 litres of extra virgin olive oil, depending on the year and the conditions. As you can see, the quantity is limited, and this ensures the exceptional quality of our product. Make sure you place your orders in time, because our taxidi is in high demand!

Building our farm

The first timid steps have been taken: our olive oil has been bottled, and you can now enjoy it on a daily basis.

What we do

But that is only the beginning! Our big dream is to create an “olive farm”: warehouses, standardisation facilities, testing and training facilities, cooking space and gathering areas.

We envision a big farm that will be open to the public at all times. We want to create a meeting point, a place where we can share all of our knowledge on olive oil with you, where you can take part in the farm work, and learn about sustainable farming, permaculture, regenerative farming.

But our farm will also have another unique characteristic. We aim to build all of our facilities according to the principles of natural construction and bio-climatic architecture. What do we mean by natural construction and bio-climatic architecture? In a nutshell, we mean construction using locally available and unprocessed building materials, which are energy-efficient. We mean buildings with a very low environmental footprint.

In all of our activities, we strive to use a holistic model of production and entrepreneurship, in which humans, the environment and the local community can play a central role. We believe that current circumstances demand a re-introduction of the ethical dimensions into all that we do. It is the new generation of producers and entrepreneurs that can and will bring about vital changes. And we are doing our part.
